Fresh Green Bean Salad with Balsamic Dressing

We blanch those beautiful beans very briefly and then shock them in ice water so that they stay perfectly crisp-tender and never mushy. A quick blanch also brings out their bold green color, which looks so stunning on the plate next to the cherry tomatoes and red onions.
