Christmas Tree Cupcakes

Kelsey Kinser

These stylish cupcakes are just the thing to bring a little Christmas spirit into your life. Deliciously rich Devil’s Food chocolate cake is topped with vanilla frosting, coconut snow, and chocolate silhouettes of Christmas trees. Using store bought cake mix and frosting means that you can have these ready in less than 30 minutes! The dark chocolate lends an air of modern sophistication but you can feel free to use green candy melts, white chocolate, or white chocolate dyed any color with gel based colorants. Don’t try to use water based food colorings or your chocolate will seize and it won’t pipe out all nice and smooth.

12 Devil’s Food Cupcakes, frosted with white frosting

1-2 cups shredded coconut

2 cups dark chocolate chips, melted

sprinkles

12 small pretzel sticks

  1. Dip the frosted cupcakes into the shredded coconut. Set aside.
  2. Line a baking tray with parchment paper. Arrange the pretzel sticks so that they are laid out on the paper lined tray. Make sure to leave space in between them.
  3. Pour the melted chocolate into a piping bag or a plastic resealable bag. Cut the tip off of the bag so that you can pipe out the chocolate.
  4. Using a zig zag motion pipe the chocolate over the pretzels, creating the image of a tree.
  5. Cover with sprinkles and move the tray to the refrigerator for 10-15 minutes until the chocolate is no longer soft. Peel the trees off of the paper and stick them into the tops of the cupcakes.
