This traditional French “peasant” dish is one of my absolute favorite dishes, it’s delicious, and it is made entirely of vegetables, making it both super simple and super healthy. All the chefs out there have differing opinions on the best way to make it – layering versus mixing, sautéing versus baking – but those differences just give us endless options and opportunities to find our own favorites.
