Wake Up and Celebrate With Birthday Cake Pancakes

When you wake up on your birthday, you know you can look forward to two things: spending time with your favorite people, and birthday cake. While some of your favorite people might be there when you open your eyes, usually you have to wait for the cake— but who wants to wait on their birthday? Cookies, Cupcakes and Cardio is here to show us how to get the party started with these Birthday Cake Pancakes with Cream Cheese Glaze.

You’ll Need:

Pancakes
– 3 3/4 cups flour
– 2 tablespoons baking powder
– 1 teaspoon salt
– 3 tablespoons sugar
– 3 eggs
– 5 tablespoons vegetable oil
– 4 1/4 cups milk
– Deep pink, sky blue, and purple food coloring
Cream Cheese Glaze
– 4 ounces cream cheese
– 1/2 cup confectioners’ sugar
– 1 tablespoon fresh lemon juice
– 3 tablespoons milk, plus more if needed

How To:

Pancakes

  1. Combine the flour, baking powder, salt and sugar in a large bowl, and whisk until combined.
  2. Combine the eggs, vegetable oil and milk in a medium bowl, and whisk until combined.
  3. Pour the wet ingredients into the dry ingredients and whisk until no lumps remain.
  4. Divide the batter equally into 5 separate bowls. Add food coloring to each bowl in whatever amounts you want to get your favorite colors.
  5. Preheat a griddle or frying pan to 350 degrees Fahrenheit or medium-high heat.
  6. Place about 1/2 cup of batter onto the griddle. Let the pancake bake for 2 to 3 minutes, until the top is bubbling. Flip and continue to cook for another minute. Repeat for all pancake batter.
  7. Place the pancakes in a vertical stack, making sure to include all colors.
  8. Top with the cream cheese glaze.

Cream Cheese Glaze

  1. In the bowl of an electric mixer fitted with the paddle attachment, beat the cream cheese on medium-high speed for 4 to 5 minutes, scraping down the sides of the bowl as needed, until light and fluffy.
  2. Add the sugar and beat until combined, about 1 minute.
  3. Add the lemon juice and milk, and mix on low speed until smooth. If glaze is too thick to drizzle, add more milk 1 tablespoon at a time.
  4. Spoon the glaze on top of the pancake cake, and gently coax glaze down over the edges.
