People on TikTok Are Raving About Making Queso on the Grill

While having a backyard BBQ isn’t necessarily a good idea right now (because, coronavirus), that doesn’t mean that you can’t enjoy the flavors of a BBQ at home. Whether it’s a socially distant BBQ with a couple friends you can trust (like, you know they wouldn’t come to your home if they tested positive for COVID-19 – apparently you can’t always take this for granted), or if it’s you and your kiddos or whoever makes up your household, TikTok has an amazing new dish for you to enjoy.

Queso isn’t exactly a new dish. We’ve loved queso pretty much forever, but we usually don’t make it ourselves. Store bought is fine, but if you have a grill or a smoker, it turns out that it’s super easy to make it yourself.

TikTok users have been sharing videos of their attempts at smoked queso. While no two recipes are exactly alike, there are common ingredients, like cheese, cheese and more cheese plus Rotel, onions, meat of choice (optional if you’re vegetarian), and it’s often ground beef, breakfast sausage, chorizo or a combination. Plus, you can add some flavor with jalapenos and garlic.

The usual technique seems to involve putting all of these ingredients in a large foil pan and placing it in a grill or smoker. After 15-30 minutes, stir everything around, and then let it cook until completely melted.

Although we aren’t planning a BBQ with our friends this summer, we may have to try out our own version of this recipe, for practice. You know, to make sure we have it perfected for when we can have our friends over.
