Strawberry Cucumber Salad with Honey Lemon Dressing

Strawberry Cucumber Salad

Ingredients
6 Cups Fresh Strawberries, sliced (about 1½ pounds )
4 Cups English Cucumber, diced (about 1½ pounds )
1 Cup Red Onion, thinly sliced (about ½ medium onion)
¼ Cup Fresh Mint, chopped (about 1 small bunch)
½ Cup Crumbled Feta Cheese (Optional)
Honey Lemon Dressing
1 Tablespoon Lemon Zest (zest of 1 lemon)
3 Tablespoons Lemon Juice (juice of 1 lemon)
¼ Cup Olive Oil
1 Tablespoon Honey
Kosher Salt, to taste
Ground Black Pepper, to taste
Directions
Place the sliced strawberries, diced cucumbers, red onion, mint, and feta cheese, if using, in a large salad bowl. Set aside.
To make the honey lemon dressing, combine the lemon zest, lemon juice, olive oil, honey, salt, and ground black pepper, and mix until well combined.
Pour some of the honey lemon dressing over the strawberry mixture and toss to combine. Taste and adjust the seasoning with more dressing, salt, or pepper, as needed.
Chef Tips
You can prep the salad and dressing separately the day before, and dress the salad just before serving.

But when we want something a little less sweet, we make this show-stopping salad. Cucumber, tomato, and feta are a classic Mediterranean salad combo — and since tomato is technically a fruit, we thought, why couldn’t we use fresh, ripe strawberries instead?
