One of our favorite food traditions is having a big Sunday lunch with our family, where everyone brings a dish or a bottle of wine to the table. There’s no better way to end a hectic weekend or get ready for the work week than good people, good conversation, and of course, good food.
It’s great that these weekly get-togethers tend to turn into a bit of a potluck; someone can bring drinks, another can bring dessert, ect. But if you’re the one hosting the Sunday shindig, you’re expected to make the main course. Trying to find something that’s big enough to feed a crowd AND tastes delicious? That’s no easy feat.
Sundays might be the perfect day for family meals, but they’re also a lazy day! No one wants to be slaving away over a hot stove preparing lunch for 15 people on their last day of the weekend. So finding a recipe that’s easy or quick to make is key.
Don’t worry, it’s not as impossible as you think to find a dish that can do it all for family dinner. The One Pot Chef has a brilliant oven roasted chicken recipe that is easy, hands-free, and is SO delicious – your entire family is going to devour it in no time.
Here’s what you’ll need to get started:
Oven Roasted Citrus Chicken
Ingredients
- 1/4 cup olive oil
- 2-3 cloves garlic
- Juice of 1 orange
- Juice of 1 lemon
- 2 tbsp. sugar
- 1 tbsp. mixed dry herbs
- 1/2 tsp. paprika
- 1/4 tsp. dried chili flakes
- Salt and pepper to taste
- Chicken drumsticks
- Quartered red onions
- 1 orange, sliced
- 2 small lemons, sliced

We love the idea of using these citrus flavors on your chicken. Of all the meats, chicken is definitely somewhat of a blank slate for flavors, and it’s so fun to play around with complimentary flavors that will make your chicken pop.
The sliced pieces of orange and lemon will be arranged around your drumsticks while they’re cooking, and the citrus will bake as well. As they’re heated, the slices will release tons of delicious juice, not just from the fruit center but from the rinds as well. All of that juice is going to soak and bake right into your chicken, giving it a zingy flavor that’s a perfect pick-me-up for your palate.
Although he uses chicken drumsticks in the video below, you can use any type of chicken you would like for this recipe – we’re excited to try it on some boneless chicken breasts ourselves!
