HEALTHY POTATO SALAD

INGREDIENTS
– Yukon Gold potatoes
– Sweet relish
– Capers
– Mustard
– Red wine vinegar
– Olive oil
– Salt and pepper
– Red onions
– Parsley
– Chives
– Cherry peppers

DIRECTIONS

1. Partially peel your potatoes and chop them. Heat them up in some warm, salty water.
2. In a separate bowl, make your vinaigrette by combining your relish, capers, mustard, vinegar, oil, salt and pepper. Mix to combine.
3. Put your potatoes into your vinaigrette. Add onions, parsley, chives, and cherry peppers. Mix thoroughly to combine.
