When you were a kid, was there anything better than enjoying a sweet, messy ice cream sandwich after a day of playing in the hot summer sun? We think not. Just thinking about the way the vanilla ice cream would melt down your arms and the chocolate cakes would stick your fingers is enough to throw you right back to being eight years old.
But just because you’re not spending your summer days having water balloon fights and playing hide-and-go-seek anymore, doesn’t mean you can’t enjoy this refreshing treat! You are NEVER too old to enjoy a good, old fashioned ice cream sandwich.
Now, you can run to the store when the hankering for ice cream sandwiches hits. You can grab one of those cardboard boxes in the frozen food section and call it a day OR you can turn your summertime craving into a fun cooking experiment!

Not interested in feeding your family anything that’s loaded with sugar? You get to chose the brands and ingredients going into this delicious dessert! And even if you do some substitutions, you’re still going to enjoy a slab of cool ice cream in between two delicious chocolate brownies — yes, you heard us right, BROWNIES — and that’s hard to mess up.
Here’s what you’ll need to get started on this fun, yummy recipes:
Homemade Ice Cream Sandwiches
- 2 cups (10oz/300g) all-purpose flour
- 1 cup (4oz/120g) cocoa powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 4 large eggs
- 11/3 cups (101/2oz/200g) granulated sugar
- ½ cup (3oz/90g) chocolate, roughly chopped
- 1 cup (8oz/240g) butter
- 1.5 quarts (1.4 liters) vanilla ice cream, slightly softened for about 5-10 minutes (either homemade or store bought)
One of Gemma’s biggest recommendations for your homemade brownie mix (and ultimately, for the entire integrity of your ice cream sandwiches) is that you use good quality chocolate for melting and baking. She suggests 50%, 70%, or 72% for the best results.
Now, it’s obviously amazing watching the entire, hypnotizing baking process and the final result is literally mouth watering – but can we just talk about that giant ice cream sandwich?! Before cutting the sandwiches, the full sheet of ice cream between two pans of brownies creates one giant sandwich…and it is one of the most beautiful things we’ve ever seen.
