I’m always looking for ways to change up classic dinners. If I can make a family favorite in a brand new way, I feel like I’ve won another battle in the fight against boring weeknight meals made of the same go-to classics. This dish, made of all the classic cheeseburger ingredients presented in a new way, has quickly become a family favorite. Gnocchi, the potato based pasta bites, replace the classic bun and make this a fun and easy dish that’s just as fast if not faster to whip up on a busy weeknight!
Cheeseburger Gnocchi
1 tablespoon vegetable oil
1 lb package potato gnocchi
1 large onion, chopped
1 lb lean ground beef
1 teaspoon powdered mustard
1 tablespoon seasoned salt
1 15 (oz) can diced tomatoes with jalapeños
3 cups beef broth
6-8 slices cheddar, colby jack, or swiss cheese
parsley, chopped to garnish (optional)
- In a large skillet on medium heat warm the tablespoon of vegetable oil. Add the gnocchi to the pan and cook until the gnocchi begins to brown. Remove this to a plate and add the onions to the pan.
- Cook the onions for about 3 minutes, or until they begin to soften but are not browning. Add the ground beef and cook, stirring to break it up, until it is all browned. Add the seasonings, tomatoes, toasted gnocchi, and beef broth and bring up to a strong simmer on medium high heat.
- Allow to cook until the liquid has reduced to a third. Top the skillet with the sliced cheese and allow to cook until the liquid is almost gone. Serve with the chopped parsley.
