This Andes Chocolate Cake Will Likely Be Your New Favorite Holiday Treat


While pumpkin spice may be the official flavor of fall, mint is our favorite winter flavor. If you already have your Christmas tree up (we won’t judge), you might be dreaming of mint too, and when we say “mint” we mean mint chocolate of course.

A peppermint mocha is all well and good, but sometimes we want to take a bite of those yummy flavors instead. Delish shows us how to do just that with their recipe for a chocolate cake that is taken to the next level with the help of peppermint extract and Andes mints. Yes, the mints that are typically eaten after a meal but are so good we could eat the entire box in one sitting (don’t judge).

The best part about this cake is that while it looks super impressive and has that perfect mint chocolate flavor, it is not hard to make. Even if you’re an amateur baker, you can do this.

The cake itself is super easy to make. All you need is a box of chocolate cake mix. Bake it in 2 round pans according to the directions on the box. If you happen to have a made-from-scratch chocolate cake recipe that you love, we think that would work too.

What makes the cake amazing is the peppermint buttercream filling and the chocolate ganache. Again, these layers are not hard to make. You can prepare them both while the cake is baking. 

For the chocolate ganache, you need 1 cup of heavy cream and 2 cups of chocolate chips. Heat the heavy cream in a sauce pan over medium heat until you see small bubbles. Then, remove the pan from heat, add the chocolate chips and whisk together. Allow the ganache to cool about 30 minutes before frosting your cake.

The filling is our favorite part and what makes this cake especially special. Once again, it is not hard to make, but it does require a few more ingredients. You will need 1 cup of softened butter, 5 cups of powdered sugar, 1 tsp peppermint extract, 3 tbsp heavy cream and 6 drops of food coloring. Mix the butter, sugar and extract together. Then add the cream and food coloring.
